It's very hard to choose just one, but I think if I had to choose one - it'd have to be "Closer I Get To You" by Roberta Flack. Everything about the song is perfect, the melody, the words, her voice (not somebody else's remake either). Donny Hathaway did a great job with the song, but you know I really prefer hearing female singers over male singers, so maybe that's part of the reason why I liked Roberta Flack's verse better.
